Get your bake on with this Bacon Chive and Maple Butter Scones Recipe! This interesting yet ridiculously tasty twist on traditional cheese scones are perfect snacks for the whole family
INGREDIENTS (FOR 12 SCONES)
FOR THE SCONES:
6 slices of Woody’s Premium Cut Streaky Bacon
3 tablespoons maple syrup
3 cups cake flour
4 teaspoons baking powder
1 teaspoon bicarbonate of soda
3 tablespoons sugar
Pinch of salt
150g unsalted butter, cut into small cubes
1 cup buttermilk
1½ cups grated cheddar cheese
¼ cup fresh chives, chopped
FOR THE MAPLE BUTTER
200g unsalted butter, softened
3 tablespoons maple syrup
Pinch of salt
METHOD
FOR THE SCONES
Pre-heat oven to 220˚C.
Place the bacon slices on a flat roasting tray and bake for 7-8 minutes, until brown and crispy.
Remove from the oven and use a pastry brush to glaze with maple syrup. When cool, finely chop up into small pieces and set aside.
Sift the flour, baking powder, bicarbonate of soda and salt. Add the sugar and mix.
Rub in the butter until it is well incorporated (alternatively pulse the dry ingredients together with the butter in a food processor).
Add the cheddar cheese, chives and bacon and mix evenly.
Add the buttermilk to moisten the dough and fold together.
Scoop the mixture into a muffin tray (¾ full) and bake for 15-20 minutes.
FOR THE MAPLE BUTTER
Beat the softened butter, salt and maple syrup together in a bowl.
Scrape into a ramekin and cool in the refrigerator.
Serve the Bacon, Chive and Maple Butter Scones warm.
