What’s Cooking with Chef Clement Pedro
At Woody’s, we pride ourselves on being innovative and forward-thinking when it comes to making the most of bacon. So, we thought who better to team up with than one of South Africa’s favourite chefs, Clement Pedro, to bring you his inventive take on established classics using Woody’s bacon.
Clement Pedro, is best known for cooking up a storm on SABC 3’s lifestyle show, Afternoon Express. But, before we get your tastebuds excited, we’re going to get to know Clem a little better and find out what inspires this foodie influencer.
1. How did you get into the food and TV industry?
After working in restaurants for a while, I ended up in magazines after taking part in a food writing competition. Thanks to the magazine industry, I started making TV appearances, and eventually I ended up doing it for a living.
2. You’re often on live TV, what’s the best/worst part about being under pressure?
The best part of being on live TV is the rush of knowing that millions of people are watching you everyday. But the worst part is that you can’t retake a shot or edit things out. But it keeps you on your toes, I love it!
3. What do you love about bacon as an ingredient?
As an ingredient, bacon has a lot to offer! It has a sweet, subtle flavour, which goes so well with most other ingredients. You can even pair it with sweet ingredients, like maple and chocolate. It’s smoky flavour enhances the taste of other components in a dish. It’s definitely one of the most versatile ingredients you could use!
4. How do you enjoy your Woody’s Bacon?
There’s nothing better than piping hot Woody’s Bacon on a soft buttered bun. But when I’m feeling fancy, I love fresh West Coast mussels with leeks cooked with woody’s bacon and topped with cream. And crisp, warm garlic bread is the best way to suck up all that sauce! In all honesty, I have so many Woody’s Bacon recipes I might just have to write a book about it.
5. Can you share the current food trends you’re loving at the moment?
I’m obsessed with cooking over coals, from meats to veggies and pastries. I love that you need great ingredients to do this. That’s a big part of my food philosophy – that you have to work with the highest quality ingredients.
6. And finally, what can we look forward to from you in the future?
I’m working on a website featuring all my favourite dishes, aimed at getting people back into the kitchen and experimenting with food again. It’s all about great food, local wines and amazing flavours!
